Ingredients
For the Momos Dough:

Whole wheat flour / Maida – 2 cups

For the Filling:

Paneer (cottage cheese), crumbled – 200 g

Spinach (palak), finely chopped – 1 cup

Onion, finely chopped – 1 medium

Garlic – 4 cloves

Ginger – 1-inch piece

Green chili – 1

Oil – 1 tbsp

Salt & black pepper – to taste
For the Beetroot Dip:

Beetroot – 1 large (boiled/roasted)

Curd (dahi) – ½ cup

Garlic – 2 cloves
-
Lemon juice – 1 tbsp

Olive oil – 1 tbsp

Salt – to taste

Method
Step 1: Prepare the Dough

Mix flour and salt, add water gradually, and knead into a soft dough.

Cover and let it rest for 20 minutes.
Step 2: Cook the Filling

Heat oil in a pan, sauté garlic, onion, chili, and ginger.

Add spinach and cook till wilted.

Mix in crumbled paneer, salt, and pepper. Let it cool.
Step 3: Shape the Momos

Roll out small discs from the dough.

Add filling in the center, fold, and pleat into momos.
Step 4: Steam

Place momos in a greased steamer.

Steam for 10–12 minutes until glossy and cooked.
Step 5: Make the Beetroot Dip

Blend beetroot, curd, garlic, lemon juice, olive oil, and salt into a creamy dip.
